Use an 8x8 baking dish. If you use a 9x13, double the recipe or the brownies will be too short, and cook covered with foil. This is my go to brownie recipe. They will be dense and fudgy and chocolately. You can also add liquors to this like cherry brandy. This will increase the bake time and they will be more cake-like until they sit for a day. If the brownies are really really thick, then cook covered with foil for a bit.

  • 2 egg yolks
  • 1-1/4 cups cocoa powder
  • 1 tsp baking powder
  • 1 tsp espresso powder
  • 8 tlbs butter
  • 6 tlbs vegetable oil
  • 1 cup brown sugar
  • 1-1/4 cup white sugar
  • 1-1/2 cups all purpose flour
  • 2 cups chocolate chips

  • 1 tlbs vanilla extract

    Steps for Completion
  1. Preheat the oven to 350°F.
  2. Beat together the eggs and yolks, cocoa powder, salt, vanilla extract, baking powder, and espresso powder.
  3. Mix together the butter melted, vegetable oil, and sugars.
  4. Add the fat-sugar mix to the egg mix.
  5. Add the flour and chips and mix until the clumps are out.
  6. Grease the casserole dish and pour the batter into it.
  7. Bake for 30 minutes or until a knife comes out clean. Remember you may be getting melted chocolate chips on the knife and not uncooked batter. Sometimes brownies are better after cooled because they become denser.
